Courgette Quiche

This can be made as one whole quiche or you can make in jumbo muffins tins for small individual servings. 

4 courgettes grated
3 rashers bacon finely chopped
1 large onion finely chopped
1 cup self raising flour
1/2 cup trim milk
5 eggs lightly beaten
1 cup grated tasty cheese

Cook bacon and onion together.  Combine all ingredients together.  Place in greased dish and bake in moderate oven 180°C for 35-40 minutes or until set (if cooking in muffin tins cook for approximately 20-25 minutes).

Serve with a salad, crusty bread or potatoes.
