Kumara and Corn Chowder

Kumara and Corn Chowder
(serves 8)

1 kg of kumara
3 cups milk
1 Tbsp margarine
1 large onion, chopped
100 grams lean bacon chopped
1 x 450 gram tin cream corn
Freshly ground pepper and salt to taste.

Peel and chop kumara, boil in lightly salted water until tender.  Drain and mash with milk until smooth.
Melt margarine and sauté the onion and bacon until onion is translucent.
Stir in creamed corn, onion and bacon into the kumara, season with salt and pepper.  Simmer gently for 25-30 minutes (add extra milk if too thick).
Serve hot.
