Chilli Beef Salad

Serves 4

1 Tbsp peanut oil
500g rump or topside steak, trimmed of fat
2-3 Tbsp sweet chilli sauce
Zest of 2 limes
3 cups mesculin salad
1 cup diced cucumber
½ red or yellow capsicum finely sliced
½ cup coriander leaves
¼ cup mint leaves – finely chopped
2 Tbsp lime juice
1 Tbsp caster sugar
½ cup chopped roasted unsalted peanuts

Heat oil in frying pan over medium heat. Add the steak and cook 3-4 minutes on each side or until beef is well browned and cooked to your liking. Remove and cool. Slice into long thin strips.
Combine chilli sauce and lime zest, toss through the sliced beef so meat is coated.
Combine salad ingredients together. Combine the lime juice and sugar then toss through the salad. Place salad on plates and top with beef. Serve sprinkled with peanuts.
