Fresh Bircher Muesli

This is a delicious start to the day. Use whatever fruit is in season or top with poached fruit compote.
2 cups rolled oats
½ cup raisins
1 cup apple juice or orange juice
1 cup coarsely grated apple
½ cup natural yoghurt
Juice of 1 lemon
½ cup sliced seasonal fruit
¼ cup mixed berries (use thawed frozen ones if necessary)
2 tablespoons honey
Place oats, raisins and apple juice in a bowl and soak for at least 1 hour, preferably overnight.
Add grated apple, yoghurt and lemon juice to mixture and mix well. Spoon into serving bowls and top with fresh or poached fruit. Drizzle with honey.
