White bean, corn and avocado salad

Serves 6

You can add any chopped salad vegetables to this, depending on what you have on hand.

400g can cannellini beans, rinsed and drained
300g can corn kernels, rinsed and drained
200 g cucumber chopped
½ red or yellow pepper chopped
½ avocado chopped

Chive dressing:
2 Tbsp chopped fresh chives
1 Tbsp olive oil
1 Tbsp lemon juice
1Tbsp red wine vinegar

Make chive dressing by putting all ingredients in screw top jar, shake well.

Place all salad ingredients in a bowl with dressing and toss gently to combine.
